How big in memory can an app be? (without lag) Im guessing pretty big because you have some neat 3-D games like N.O.V.A that have big 3-D files/ .. :/

It depends on the phone model. 3GS and iPad both have 256MB unified RAM, and I am pretty sure an app can use most of it. Unified means the memory can be used for anything, including textures and meshes for the graphics card.
The older phones only had 24MB graphics memory, and I think they had less RAM as well.
The iPhone 4 I think has 512MB unified RAM? Correct me if I'm wrong.
It's possible to have more resources than that in a game in total by loading/unloading while running, although that would mean that the app download size would be more than 256/512 MB, which is quite a lot...
