What is the size limit for sprites? Do they have to be certain sizes?

There shouldn't be limit for sprite size except the device's physical capabilities: 1024x1024 for older iPhone/iPod and 2048x2048 with newer iPhone/iPod/iPad
But don't expect miracles in terms of FPS if you try things with such big sprites. So even if you need that big sprites, try tessellating them and putting them in sprite sheets for better performance
