Hello. What do people generally use to make app video demos? Are they doing a video capture in the simulator, or something else?
Also, are the finger tap icons post-processed in, or are they put in the app for this purpose?
Wow, that came out very incomprehensible, but I stayed up way too late last night working on my game... My apologies.
I am in the process of making a preview demo for my first game. I am using the iSimulate app which let's you use your iPhone to control the simulator so you get multitouch and the accelerometer. Also, you can reskin the touch icon. To actually do the video demo I am using Screenflow whick will capture the video from your Mac's screen. screenflow allows you to cut and paste clips and add text, audio and other graphics to your demo.
I used iShowU HD which was reasonably priced to record from the simulator and then passed the uncompressed video off to someone who knew what they were doing with after effects.

You can build your own skins, I have a pigs trotter if you need it :)
i used ishowhd and a fantastic little free video editing and conversion utility called MPEG streamclip from http://www.squared5.com.
We use Screenflow for all our screen-casting needs. It works great: lets you record video and audio from your game as well as live audio from a mic simultaneously. If we're ever doing hand-held shooting, we just use the built-in video recorder in the iPhone 3GS:
