I have a question about how people pay other artists/musicians/developers etc that contribute to their app. I don't have much start up money, so I was thinking of offering a percentage of my app's sales to my artist. Does iTunes connect allow you to divvy up your payment so the money generated from an App can be dispersed in an appropriate way automatically? Or would I need to be on the honor system and create some sort of legal contract with my artist to make sure I pay them x% of my sales of that app? I feel like I may get the short end of the stick if that is the case, when it comes to taxes.

iTunesconnect can't do that, it'll only deposit to one bank account.
You'd need some sort of contract or agreement, whatever it is get it written down and signed by everybody first. Even if it's just one page with the basics--that's better than nothing.
I'd include to pay them X days after you receive the money from Apple. I don't know about taxes, but depending where you are, you should be able to indicate it as some sort of expense or royalty. But that'll depend on your country's rules.
