Any screen capture software such as iShowU (http://store.shinywhitebox.com/home/home.html) can be used for the capture of the simulator while it is running.
The finger effect is most probably phoneFinger (http://www.wonderwarp.com/phonefinger/) which swaps your usual mouse pointer for a disembodied hand.
Screenflow can do this.
Instead of using your mouse, I'd highly recommend using iSimulate! They just released a new version in the past day or so that actually allows you to see the contents of the simulator's screen on the device.
Search on the app store - I got it fairly cheap early on, but for development it's worth every penny. If you set up iSimulate to accept your touches wirelessly, then you can use any screen capture software to record, no need for phoneFinger. Plus you can use the accelerometer and CoreLocation and multitouch for more than two points.
I'll also vouch for iSimulate (and iShowU) I actually just had to e-mail iSimulate support about some issues I was having with OS 3.1, but I got them straightened out very quickly their support was quick and helpful.
ooo, haven't seen the new update, thats excellent! Similar feature to Unity. Off to check it out....
